Corn Smut.

And no — it’s not as scandalous as it sounds.


What Is Corn Smut?

Corn smut is a gray, swollen fungus that infects corn kernels and corn tassels and replaces them with puffy, ash-colored galls.

It happens when fungal spores enter through wounds in the plant — often after:

  • Strong storms

  • Hail damage

  • Wind stress

  • Mechanical injury

Even in well-managed fields, nature sometimes finds a way in.


Why Is Corn Smut a Problem for Popcorn?

While corn smut is harmless to eat once cooked in some parts of the world, for popcorn it means those kernels are ruined.

If a kernel is infected, it won’t pop properly. And if it doesn’t pop properly, it doesn’t make it into your bag.

But Here’s the Interesting Twist…

In Mexico, corn smut is actually considered a delicacy called huitlacoche (pronounced weet-la-COH-chay).

It’s sautéed and used in tacos or quesadillas for its rich, earthy flavor.

Proof that one farmer’s problem can be another culture’s prized ingredient.

We love that perspective — even if we’re not adding it to our popcorn lineup anytime soon. 😉


Can Corn Smut Be Prevented?

We do everything we can to reduce risk:

  • Balanced soil nutrients

  • Strong plant health
